devastated and plundered, partly burnt but restored many times, it still
has the austere Roman Burgundian architecture character with rare
concessions to a country Gothic charm. As well the big square tower
whose architecture of defence is intact and the small one are built quite
similar. The old rampart-way around is surmounted by a gallery from where

Clos de Vougeot, built by Cistercian monks and nowadays headquarters of
the Brotherhood of the Knights of Tastevin.
Suggested visit of Abbaye de
Citeaux The Abbey of St Nicolas des Citeaux dates back some
900 years. The Monks of Citeaux became the owners of Citeaux Vineyards in
order to serve their own wine upon mass, following their founder Saint
Benoit advice. Cellars were built in the 12th century and production of
this fermier cheese began as recently as 1925. It is as soft to the eye as
it is to the palate, and rather milder than the majority of washed-rind
cheeses. Most of the cheeses are eaten locally
